The basic steps for preparing and cooking a delicious steak are the same regardless of the cooking method you choose. Start with a great steak. Thaw steak completely. Lightly oil and season steak. Cook until 5°F below the desired doneness. Rest 5 minutes.
Place a cast iron skillet on the cooking grate and add 1 Tablespoon of grape seed oil. Allow the pan to heat until the oil starts to slightly smoke. Place one steak in the skillet and press down for good surface contact. Set a timer for 3 minutes. Flip the steak and add the butter and half the garlic and thyme.
Pour the marinade into a resealable plastic bag. Add steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for up to 8 hours. Remove steak from the marinade and shake off excess. Discard the remaining marinade. Cook or grill steaks to desired doneness.
Flip and cook on the other side for 1 minute. Continue cooking and flipping for a total of 4 minutes. Flavor and baste the steaks. Carefully add the butter, garlic, and herbs to the pan. Flip the steaks once more. Tilt the pan so the butter pools on one side and use a large spoon to baste the butter over the steaks.
Once seared, move your cowboy steaks to lower heat to allow them to finish cooking through. This process will take between 11-15 minutes on each side. Cook steak to desired doneness. For a medium-rare cook, don’t cook any more than 130-degrees internally using a meat thermometer. Remove steak from the grill and allow to rest for 5-10 minutes.
Grill. Place the steaks on the pellet grill and close the lid. Cook the steaks at 225 until the internal temperature of the steak reaches 10 degrees lower than your target finished temperature (115 degrees F for rare, 125 for medium rare, 135 for medium, 145 for medium well, or 155 for well done).
